Mix Veg - the weekday sabzi with kitchen king masala
What to do with the vegetables left in the fridge is a daily question. Mix veg is the easy answer - carrot, cauliflower, peas, beans, paneer, whatever is there. A kitchen king blend is made for exactly this kind of sabzi, so you are not left matching spices.
Ingredients
- Mixed vegetables - 3 cups (carrot, cauliflower, peas, beans)
- Paneer - 100 g (optional)
- Onions - 2 medium, finely chopped
- Tomatoes - 2, finely chopped
- Ginger-garlic paste - 1 tsp
- Chavsamrat Kitchen King Masala - 2 tsp
- Chavsamrat Haldi Powder - 1/4 tsp
- Oil - 3 tbsp
- Cumin seeds - 1/2 tsp
- Coriander leaves, salt
Method
- Wash and cut the vegetables to a similar size. Steam the firmer ones - carrot, cauliflower - for 5 minutes.
- Heat the oil and let the cumin crackle.
- Add the onions and fry until golden.
- Add the ginger-garlic paste and fry until the raw smell goes.
- Add the tomatoes and cook until completely soft.
- Add turmeric, salt and Chavsamrat Kitchen King Masala. Fry for a minute.
- Fold in the steamed vegetables. Add a quarter cup of water and cover.
- Simmer 8-10 minutes. Add the paneer at the end and give it 2 minutes.
- Finish with coriander and serve with chapati.
Tips
- Do not over-cook the vegetables or the sabzi turns to mush.
- A spoon of cream or curd makes the gravy rounder.
- Add the paneer last, otherwise it goes rubbery.
